Early recipes of Neapolitan ice cream employed a variety of flavors. The ice cream was meant to resemble the three stripe pattern of the Italian flag, so any three flavors served side-by-side could be considered Neapolitan. It’s likely that chocolate, vanilla, and strawberry eventually became the standard recipe because they were the most popular flavors in the United States in the late 19th century, when this style of ice cream was introduced.
